I can’t stop making these Creamy Butter Chickpeas and Veggies for dinner. This dish has officially earned a spot in our busy weeknight dinner rotation, not only because it comes together in no time, but also because it strikes that perfect balance of cozy, flavorful and satisfying.

Now, I know that comfort food is usually what we think of during the colder months (can you tell I’m already a little excited for fall!?), but let’s be real—sometimes you just crave a “hug in a bowl” in the middle of summer. And this is it.

These Creamy Butter Chickpeas are a (mostly) vegetarian spin on one of my go-to takeout orders: Indian Butter Chicken. But instead of the usual chicken, we’re using chickpeas, carrots, and butternut squash for a hearty version that’s just as rich and comforting. The sauce is silky, perfectly spiced, and clings beautifully to the veggies. I love that it’s a combination of tangy, sweet, and savory all wrapped up in one delicious dish. And did I mention that it all comes together in just one pan (aside from whatever you serve it with)?

This is the kind of stress-free recipe that you’ll keep in your back pocket for easy weeknight dinners year-round. Serve it over rice, with naan, or both (how I do!), and get ready to scrape the bowl clean.

What should I serve with butter chickpeas?

Carbs are (always!) the answer. Basmati rice, garlic naan, or roti are all great options to soak up that delicious sauce.

How can I make this dish completely vegetarian or vegan?

It’s easy to do! To make this vegetarian, simply swap the heavy cream for coconut cream. To make this fully vegan, use coconut cream and your favorite plant-based butter in place of regular butter. Just be sure to shake the coconut cream before using as it can separate!

How long will leftovers keep in the fridge?

This dish is very leftover-friendly and the flavors will actually develop even more over time. Store any leftovers in an airtight container in the fridge for up to 5 days.

Can these butter chickpeas be frozen?

Yes! They last in the freezer for up to three months. Be sure to store in an airtight container or freezer-safe bag (with as little air as possible).

What do butter chickpeas taste like?

They’re creamy, rich, and full of layered flavors. The tomatoes give the sauce a slight tang that’s balanced by the sweetness of the heavy cream and the richness of the butter. Aromatic spices like cumin, garam masala, and paprika give it a delicious savory depth.

Is this dish spicy?

Not really! It’s more spiced than it is spicy. Think warming, aromatic flavors rather than heat. It includes a pinch of crushed red pepper for a subtle kick, but the heavy cream and butter balances it out well and the finished dish is pretty mellow. If you’re sensitive to spice, you can remove the crushed red pepper. Alternatively, if you prefer more spice, you can add a touch of cayenne pepper along with the other spices to kick it up a notch.

What if I don’t have dried fenugreek leaves?

No worries! You can totally leave them out. Dried fenugreek leaves (also called kasuri methi) add an earthy and slightly sweet flavor profile to the signature taste of butter chicken. Great if you have them on hand, but still delicious without!

What pan should I use to make this?

A Dutch oven works great for this (and so many other recipes)! It’s one of the best kitchen investments in my opinion. You can also use a ceramaic braiser or high-sided stainless steel pan - just make sure it’s not too shallow!

Where did butter chickpeas originate?

They’re a veggie twist on the classic Butter Chicken, which originated in the 1950’s at Moti Mahal restaurant in Delhi, India. This version swaps the chicken for chickpeas (along with some extra veggies!) but keeps the same iconic flavors of the original.
