Well, we’ve almost made it to Friday! I hope you’ve all had a great week so far. Here in LA we’re gearing up for some rainy days ahead, and this cozy One Pan Chicken Fricassee is exactly what I’ll have simmering on the stove.

Chicken Fricassee is a comforting French classic that’s been around for centuries. Traditionally, it’s a gently simmered stew with tender chicken and a silky sauce. My version stays true to that same coziness but leans into deeper, golden-brown flavor and weeknight-friendly steps.

It doesn’t require many ingredients but it’s the way they all come together perfectly that results in tons of flavor and the most tender juicy chicken. It’s the kind of restaurant-worthy dish that feels fancy without requiring much effort. I hope you try it and can’t wait to hear what you think!
